Misal Pav, a beloved Maharashtrian street food, is finding fans far beyond the borders of the state, thanks to its fiery flavors, affordability, and deeply rooted cultural identity. Once a humble breakfast dish, this spicy curry served with buttered pav (bread rolls) is now gaining popularity across India and even internationally.

At its core, misal is a spicy curry made primarily from sprouted moth beans (matki), flavored with a blend of traditional spices, garlic, ginger, and chilies. It is topped generously with crunchy farsan (a savory mix), finely chopped onions, fresh coriander, and a squeeze of lime. The accompanying pav, usually toasted with butter, helps soak up the flavorful “tarri” or spicy gravy that defines the dish.

Local food vendors and upscale cafes alike have embraced misal pav, offering unique versions that range from mild and sweet to extremely spicy. "It’s not just food, it’s an emotion for many Maharashtrians," says Amruta Khedekar, a Pune-based food blogger. "Every region in Maharashtra — be it Kolhapur, Puneri, or Nashik — adds its own twist, making it a versatile culinary experience."

Recently, misal pav has also become a favorite among food influencers and YouTubers who travel across Maharashtra in search of the ‘hottest’ bowl. Some restaurants now offer misal challenges, where daring eaters are invited to try extra spicy variants for prizes or social media bragging rights.

Beyond its heat, misal pav has nutritional value too. Rich in protein and fiber from the sprouts, it offers a wholesome, plant-based meal option. As the demand for regional and vegetarian cuisine continues to rise, this spicy street food is fast becoming a staple in food festivals and urban cafés nationwide.

From a breakfast table in a small Kolhapur home to menus in metro cities, misal pav has truly come a long way — and its journey is far from over.
